You need to read up on lipo basics. Obviously your making errors on how to work with LiPo's. For one you need to connect the batteries in series to make 48v. With a dongle like this.

Forgot to mention. You will need atleast a 48v 20ah battery and ride at around 25-30km/h max to get +50km distance on a Direct drive. You can also go geared 250w hub motor and a smaller battery. But that will get boring quick in my opinion.

Get the 1000w motor if you are going to run 25 amps. 1500w hubmotors need 40+ amps controllers to be happy.

The weak point is in the LCD display. You got moisture in your display and that is why you got the failure. You need to fix a water proofing solution for the display. I recommend a LCD cover.
