I've done what you are doing but not with a stepped down dc to dc. just PWM 24v to the 12v trolling motor, didn't seem to get hot being in water and didn't wear out. on a smaller craft like you are using should be great. Also the Model airplane props are a good thing, but a bit larger than you liste...
