It would work exceptionally well with two motors in a 2WD ebike. That being said, when you accelerate, most if the vehicle weight shifts to the rear tire, so...

A more balanced system might put a 1000W controller and motor in the front, and a 1500W system on the rear tire...

It's best to charge lithium cells to 4.0V-4.1V, but its widely accepted that 4.2V per cell is the max.

4.2V x 13S = 54.6V as the absolute max voltage that pack should be charged to.

If you plan to actually haul cargo in that large cargo box, you would definitely be better served by a mid drive motor, so the motor has some gears to work with. The smallest I would use would be the 48V BBS02, and if you think you wouldn't get into trouble, a slightly larger 48V BBSHD would be idea...

If you add a temp sensor to the stator on the inside of the motor, you can run a surprising amount of watts through it, as long as it's only a temporary peak. I don't know if it's a good idea or a bad one. For hill climbing, put on the smallest chainring that will fit on your selected drive unit. The fact you want to convert a belt drive complicates things. The TDSZ2 will climb very steep hills, but because it has less power than the other two you mention...
