Hi guys I just want to know if my system is running as it should be

I am running 18s lipo 18ah
Charged full at 75 volts
Voltage drop under hard acceleration is down to around 71 volts
26 inch voodoo mtb
Is it right that my too speed would be around 40 mph with 50 amp flux weakening enabled ??
This is in high power mode preset 3 on ca with no limits
Power is brutal up to 40 mph then it just acts like erm best way to describe it is like when a car is missing or running lumpy it's like the power keeps cutting in and out
It does not matter if I am using little power say 1.5kw on flat maintaining 40 mph or rapid acceleration up hill using 6kw once it gets to 40 mph that's it
Is this normal or is something wrong with my setup
I tried turning my flux weakening up with the Bluetooth app and it would only let me set 50 amp as max is this normal too ??
