This paper is pretty decently written, easy to read, and explains why it doesn't matter a bit what the current rating a datasheet for a FET happens to say.

A fet needs to get many thing right before it becomes worth a damn. There are a lot of different fets and packages, many many of them are lacking a few of the elements needed to make them an useful part for a motor controller.

Good article Luke, Power Electronics is one of my favorite trade rags...

As you have said, a 1,000 amp, 100+ volt 3 phase controller is not an easy thing to design with reliability as a requirement.
