poor man's trueing stand

Did the wheel still look wobbly at the end of the video to you too?

I might give this a go anyway as I cant see much functional difference between this hack with your bike upside down and an actual truing stand...

With cantilevers or "V" brakes, it always seems pretty easy to align the wheel just by inverting the bike and following "normal" truing methodology. If necessary, adjust the system so there is very little clearance between the pads and rim. With discs on some bike(s) now, I have an archaic stand that still does an adequate job.
 
When I build a wheel, I have two old forks, one 135mm and the other 100mm. I clamp the appropriate one to my desk. Tjen I tape a piece of cardboard to the fork, marked where the rim needs to end up, and adjust spokes til it happens.

For truing a wheel, just flip the bike upside down. The zip ties in the video would work. I usually tape something to a chain stay. I can do better than what they did in the video,
