Wiring/fuse help

Noob at this, I have 72v Qs 4000w, Votol 200sp in a cart
Getting it all bench set up, blew up the display (I think).
What protection/ fuses should I be using.
ANL on battery positive?
Can I use car 12/24v fuses for display(72v)
Should I fuse the supply into the controller from key
Anywhere else?

Fuses need to be rated for the voltage they're used for. If not, the current can just jump the gap in the blown fuse and continue arcing, and actually cause a fire. It might not happen, but if it does the problem is likely to be worse than if you didn't have a fuse at all. :(

Fuse anything that you need to protect the wiring of, between the fuse and the point you think a wire might fail. They're there to protect the wiring and the power source, so if you think something could ever short out in a way that could damage the wiring and / or source, that could be protected by a fuse, then that is something you can decide to add a fuse for.

Typically things with higher voltages on them that are able to supply enough current to heat wiring up if shorted out are things you would want to fuse.
