Consider using LTO Battery LTO66160, is one of the safest battery in used. It has high discharge rate and capacity. Its being used by lots of Electric buses.. Thou is more expensive, the safety wise is more than the cost itself.

When building bigger pack... many consideration is needed, not just adding battery. There's three most important areas that need to be applied. Safety, Environment protection and Ventilation. A lot of battery pack builder did not consider ventilation as 1st priority.. as such, many battery pack...

Option 1 & 2 is the same... both will give you 3S2P. In general, add battery in series will give you more voltage, adding battery in parallel will give you capacity. This is what most of the battery pack are made off.. Unless you're going for very big battery pack that need to spit the battery...
