Gimbals would work except they would get hit by stuff and break. I have thought about it and they simply dont have the ground clearance. Your on the right track though.

I use my board all the time and go like 18mph on only 350w. I mean you could current limit it to 200 prob go like 15 and not get in trouble. Just an idea...

you are correct you will lose traction but its the same as if you didn't have an e board. I don't really know what you are saying anymore so.
