You should have no worries with your chosen set up as it comes with a temp sensor programed to the CA3 that will reduce power if you start to overheat. You'll be very happy with your choices. Add in a matching Freewheel and a disc spacer if you have disk brakes as well as the torque arm!

It would be 14ah. You can not hurt anything with Ah, amp hour is not power like amps but is the capacity. Just means the size of your gas tank.

Bike kits are not compatible with hydraulic brakes. You will have to go to cable unless you add a switch and wire to your existing brake levers.

Dropping to 7.2ah from 10ah with wide open throttle would actually decrease your range to about half. You are best to look at another battery technology unfortunately while increasing the Ah not decreasing it if you are increasing your speed as well.
