Not feasible. The ratchet mechanism can only turn the drum one gear at a time so you'd still have to click it multiple times even to skip a gear. I guess you could make a custom shift drum.
Not worth it though as the extra ratios are nice to have so it would not make sense to remove them.
I think they try to reduce the cost across the board to help justify the cost of the batteries.
I don't think all electric motorcycles need transmissions but I do think that any electric dual sport would greatly benefit from having atleast high and low range.

It retains it's factory 5 speed manual transmission and clutch. This is great for quickly selecting the proper gear for the terrain.

You dont want the tension side of the chain under the knuckle. The motor will try to pull the suspension up under load. Everytime you hit a large bump the suspension travel will shock back torque through the chain into the motor.
The idler carrier rotates on the same axis as your suspension knukle. The idlers contrain tthe chain to the same width as the motor drive sproket. This allows the swing arm to move up and down without tighteneing or loosening the chain. Essentially this design does the same thing as adding a...

I have received motors from sky hobby. The shaft is 12mm like normal. The rep said they could easily supply 5000 units a month. I suspect the reason HK dropped the is to sell the higher end scorpion motors.
IDGAF what the price is at this point. Sky Hobby is reliable and always in stock. I have also received motors from HK and Leader Hobby. So far my best experience has been with Sky Hobby and will be where I order from next. I only buy these for cores to rewind.
