Here's my build, just put it together a week ago.

-Nine continent 2807 motor (i ordered a 2806 but to my surprise a 2807 showed up :( )
-12 x 4110 MOSFET Extreme Modder Controller LYEN Edition
-3 X 6C Zippy Turnigy Lipos 3000mah 20c from HobbyKing (72v)

Planning on getting
-Maxxis Hookworm Bike Tires
-Larger Disc Brakes
-3 more 6c lipos to run parallel

Currently waiting on a torque arm so i haven't been accelerating too hard. Not going to lie though this thing is fast for my first build! I'm completely addicted after building this, i know i'm going to end up spending way too much money haha.

Nice and clean build. Reminds me of my first bike but yours looks much better :D
Drawing 50 amps from a 3aH lipo battery is just asking for some sort of trouble :?

Your pack is going to deteriorate rather quickly t those settings.
 
These batteries will do 60a constant 90a max peek, they were only $22 a pack i'm big into rc cars so i guess we'll see how long they last at 50a. I'm actually getting pretty good range also i drive about 7 miles and they only drain to ~3.8v / cell. I've drove about 45 miles on the bike so far.

Running 18s 50a max, battery was around 68v at those max speeds. Also takes about 200-300m of road to reach low 40s.

Just wanted to post this so people could get an idea of max speed on a 9c 2807 it is different than ebike.ca simulator told me.
Oh also this is 26" wheels with Hookworm tires

In a few weeks i'll be doing speed runs with 24s pack.
