Build planning - Turnigy 80-100 180kv info?

I'm planning a new build now that I got a new frame, diamondback response (needs a new fork though).
I am planning on using a Turnigy 80-100 180kv or 130kv depending on the 'sweet spot' in the power curve for the motor.
The target speed is a max of 35mph, as part of the gearing I have a strumy archer AW hub for use as a multispeed jackshaft, the AW gearing is (1:.33, 1:1, 0.75:1)
Probably going to use timing belts with a top hat adapter for the rear disc.
With a CC HV1?? controller and HK lipos voltage unknown.

So now the question is knowing a 35mph speed, and a 26inch tire, what would be the optimum voltage and gear ratio?
Does anybody have any power data for the 80-100 motors?
 
Thanks Miles, It looks like from your chart that the best efficiency is at about ~2200 watts and ~5800rpm, ~60amps.
But it looks like the best power band before the efficiency drops to much is at ~4000watts, ~5400rpm and ~100amps.
So that's something to shoot for, Miles where did you get that program at?

Things will rise or fall with the voltage used, of course, as efficiency is primarily related to current/torque/load. With current limiting, the efficiency curve will flatten out where limiting starts.
