Don't ESCs have to have their throttle curve (or max throttle position) mapped first?

I'd say try turning the system on with throttle preset to 100%, then after the esc initializes (beeps a few times) ramp it down to 0... and you should hear some more beeps telling you it's set.

Just a guess from the RC stuff I've worked with, give it a try.
