So guys, I have read about the battery problems before. It sucks that some parts of the Ebike are very robust, but the batteries lack long term support, rendering some e bikes useless, and inevitably headed for the dump.
Unless we do something about it.
I still don't know what I'm doing very well, but I have bought a cheap 8 channel logic analyzer, and I have hooked it up to the two middle ports on the Haibike Tranzx battery, it seems it uses async serial communication.

Where on earth do I go from here?
I know I will somehow have to capture the info from the bike, so I will have to tap into the wires somehow and see the communication back and forth.
If I can mimic that when the battery is fully charged I should be able to do anything I want with any battery pack I want and make it work.
not sure if I should ground to the negative terminal.
